Yellow Birthday Cake!

The yellow birthday cake recipe will make two 8-9 inch layers, one 9x13 inch sheet cake, or 24 cupcakes.

Preheat oven to 350 degrees Fahrenheit. Spray two 9 inch cake pans with vegetable spray and line them with parchment paper. Adjust oven rack to middle.

The Yellow Birthday Cake takes less than 10 minutes to prepare.

Using a large mixing bowl, mix together 2¾ cups of cake flour, 2½ teaspoons of baking powder, and ¾ teaspoon of salt.

In advance soften two sticks of unsalted butter. Place the butter in a large bowl and with an electric mixer; blend in 1¾ cups of sugar. Blend until the mixture is fluffy. This will take approximately 4 to 5 minutes depending on how soft the butter is.

Add 4 large eggs and 1 tablespoon of vanilla extract to the mixture. Mix until the batter is a uniform color. Once during the mixing, turn off the mixer and use a spatula to scrap the sides of the bowl. Mix the side scrapings into the batter uniformly. Using a 2-cup measuring cup measure 1½ cups of milk.

Using the electric mixer on the slowest speed, mix about a third of the flour mixture into the batter. While the mixer is running on slow, slowly add about half the milk, and then add another third of the flour mixture. Repeat adding the remainder of the milk and flour mixture.

Stir the batter with a spatula to make sure all the ingredients are blended well, and then pour the batter into your pans. Smooth the top of the batter without touching the bottom of the pan.

Bake about 20 to 25 minutes for a round cake pan and about 25 to 30 minutes for a sheet pan. The cake is done when a tooth pick inserted in the center comes out with a few crumbs. Remove the cakes from the oven and rest them on a wire baking rack for about ten minutes. Then use a small knife to loosen the cake from the sides of the pans. Flip the cake over on the rack and allow it to cool for about 2 hours.

The cake may be frosted with any flavor cream frosting (vanilla, chocolate, orange, etc.) Nuts or candies can be added to the sides and top for decorations.
