White Birthday Cake!

The white birthday cake is usually made as a layer cake using two 9 inch pans.
Preheat oven to 350 degrees Fahrenheit. Spray two 9 inch cake pans with vegetable spray and line them with parchment paper. Adjust oven rack to middle.
The cake recipe takes about 10 to 15 minutes to prepare.
In a four-cup measuring cup or small mixing bowl whisk together 1 cup of whole milk, 6 large egg whites at room temperature, two teaspoons of almond extract and one teaspoon of vanilla extract.
In a separate large mixing bowl whisk together 2 ¼ cups of cake flour, 1 ¾ cups of sugar, 4 teaspoons of baking powder, and 1 teaspoon of salt. Mix 1 ½ sticks of softened butter into the flour mixture with an electric mixer on low speed (to the moist crumb stage - 1 to 2 minutes).
Pour one half of the milk mixture into the flour mixture and beat on slow speed (increasing to medium) for about 4 minutes. Pour in the remaining milk mixture and beat until mixture is smooth and velvety. Stir sides of bowel with a spatula and beat with mixer to blend.
Pour batter into two prepared pans and smooth tops.
Bake for 20 to 25 minutes or until a toothpick inserted in the center comes out with a few crumbs.
Remove cake pans from oven and run a knife around the edge of the cake. Immediately flip the cakes onto a cooling rack and remove the parchment from the bottoms. Allow to cool for 1 to 2 hours.
Frost with butter cream icing.
