Red Birthday Cake!

The red birthday cake is great for December, February, and July birthdays.
To make the red velvet cake preheat oven to 350 degrees Fahrenheit. Spray two 9 inch round pans with vegetable spray and line them with parchment paper. Adjust oven rack to middle.
Cream ½ cup of shortening and beat in 1½ cups of sugar. Add 2 eggs, one at a time and beat well. Using a small bowl, prepare a paste of 2 tablespoons of cocoa and 1½ ounces of red food coloring. Blend paste into shortening mixture. Add 1 teaspoon of salt, 2½ cups of flour, 1 teaspoon of vanilla, and 1 cup of buttermilk.
In a small dish measure out 1 table spoon of vinegar and sprinkle 1 teaspoon of baking soda over vinegar. Immediately pour vinegar mixture over batter and stir thoroughly. Pour batter into two prepared pans and smooth tops.
Bake for 25 – 30 minutes or until a toothpick inserted in the center comes out with a few crumbs. Remove pans from oven and run a knife around the inside edge of the pan. Immediately flip them onto a cooling rack and remove the parchment from the bottoms. Allow to cool for 1 to 2 hours.
