If you decide to make the cake yourself, remember a loaf pound cake is a perfect birthday cake to be accompanied with ice cream and toppings, such as fresh fruit.
The batter of a pound cake is very temperamental. For best results prepare the batter in a food processor. It takes about 5 minutes to prepare, about 70 minutes to cook, and three hours to cool.
This cake recipe may have added flavor if you add oils or zest of orange, lemon, or ginger.
The pound birthday cake is easy to mix and has few ingredients: unsalted butter, eggs, sugar, vanilla, and cake flour. The cake is rich and creamy with a butter fragrance.
The loaf shape makes this birthday cake ideal for serving slices with ice cream.
The pound birthday cake batter has a tendency to separate, so for the best results prepare the batter in a food processor. Using the food processor actually makes this birthday cake one of the easiest to make - it takes about 5 minutes to prepare!
Preheat oven to 350 degrees Fahrenheit. Spray a 5 by 9 inch loaf pan with vegetable spray and line the bottom with parchment paper. Adjust oven rack to middle.
Melt 2 sticks of unsalted butter and keep hot for next step. Do not use salted butter for this birthday cake.
Place 4 large room-temperature eggs, 1¼ cups of sugar, and 1½ teaspoons of vanilla in a food processor. Blend for about 10 seconds. While the processor is running, pour the hot, melted butter in a steady stream in the feed tube. Blend for no more than about 30 seconds.
Pour the egg mixture into a large bowl where you will complete the cake batter.
In a separate small bowl, measure out 1½ cups of sifted cake flour. You will add a little flour at a time to the egg mixture as follows:
Sift ½ cup of cake flour over the egg mixture and whisk the mixture until mostly blended together. Repeat twice more sifting in ½ cup of cake flour while whisking until the lumps disappear.
Pour the pound birthday cake batter into the prepared pan and wipe the sides of spilled batter. Smooth the top and place the pan in the center of the oven. The birthday pound cake is done when a toothpick inserted in the middle comes out with a few crumbs. The estimated baking time is 55 minutes.
Allow the birthday cake to cool in the loaf pan for about 15 minutes. Flip the pan onto a cake rack and remove the cake from the pan. Remove the parchment paper and flip the cake over. Allow the cake to cool for about 3 hours.

For a LEMON FLAVORED BIRTHDAY POUND CAKE, add 2 tablespoons of lemon zest and 2 teaspoons of fresh lemon juice before processing the egg mixture. It is best to add the sugar, lemon zest, and lemon juice together first in the processor.
For an ORANGE FLAVORED BIRTHDAY POUND CAKE, add 1 tablespoons of orange zest and 1 teaspoons of fresh orange juice before processing the egg mixture. It is best to add the sugar, orange zest, and orange juice together first in the processor.
For a GINGER FLAVORED BIRTHDAY POUND CAKE, add 1½ teaspoons of ground ginger, ½ teaspoon of mace, and 3 tablespoons of crystallized (minced) ginger before processor the egg mixture. It is best to add the sugar and ginger flavors first in the processor.
