Mexican Dip - 5 Layers

The Mexican Layered Dip is a five layer cold dip for tortilla chips.
The dip has ingredients that are in primary Mexican dishes - such as chili, tamales, and burritos. The flavor is enhanced with the freshest ingredients from the garden: tomatoes, lettuce, cilantro, and beans. The salsa in one of the layers is canned, but fresh salsa would make the dish have more pizzazz!
This dip is served in a clear bowl to reveal the beauty of the layers. It is served with tortilla chips and shredded cheese.
The tortilla chips need to be thicker for dipping and may be from white, yellow or blue corn. The white corn chips are more delicate and do not work well with heavy dips. The yellow and blue chips are thick enough to hold the heavy dip.
The Mexican Dip ingredients are:
¼ cup of shredded sharp cheddar cheese; ½ cup of chopped fresh tomatoes; 2 cups of shredded iceberg lettuce; 2 tablespoons of chopped cilantro; 16 ounces of black bean dip or mashed black beans flavored to you taste; ½ cup of medium spicy salsa; ½ cup of sour cream.
Mix together the sour cream and salsa in a small bowl. Using a large clear bowl, start building the layers with the bean dip first. Then spread the salsa/sour cream mixture on top. At the last minute (just before serving the dip) add the last three layers: shredded lettuce, chopped tomato and shredded cheese. Garnish the top with the chopped fresh cilantro.
This recipe makes eight servings. Give each guest a small plate for the dip and chips to prevent guests from double-dipping.
