Preheat oven to 350 degrees Fahrenheit. This recipe requires two round layer cake pans. You will need one cup of fresh coconut milk for the batter and one cup of fresh grated coconut for the icing.
Lightly spray the cake pans with vegetable oil spray and flour the bottoms of the pans in advance. Using a large spoon and a large mixing bowl, cream one stick of butter or 8 tablespoons with 1 cup of sugar. Mash the mixture against the side of the bowl to blend the sugar and butter until it is fluffy.
In a separate small bowl, break and lightly beat five eggs for this perfect coconut birthday cake.
While beating the coconut cake butter mixture, slowly pour in the eggs in a steady stream. Beat this mixture of butter, sugar and eggs until the eggs are completely absorbed and the batter is well blended and light. In a medium bowl sift together the dry ingredients: two cups of flour, ½ tablespoon of baking powder, and ¼ teaspoon of salt.
Be careful with this next step to add only ½ cup of the dry ingredient mixture at a time to the butter batter and blend completely before adding the next ½ cup of dry ingredients.
When the cake mixture is well blended slowly add 1 cup of fresh coconut milk - to be sure it is not added too fast, add about ¼ cup of coconut milk at a time and blend well. Add one teaspoon of vanilla and ½ teaspoon of grated lime peel and blend well. Pour equal amounts of batter into the two round layer cake pans and place them in the center of the preheated oven. Cook the cake for 30 minutes or until a toothpick inserted into the center comes out clean. Remove the cakes from the oven and allow them to cool in the pans for about five minutes. Turn the cake pans over onto wire racks and remove them from the pans. After the cakes are cooled completely (about 1 ½ to 2 hours), they are ready for the icing.
The icing for a coconut birthday cake is a boiled mixture of sugar, lime juice, water, egg whites and vanilla. Prepare two beaten egg whites in advance. In a medium saucepan combine two cups of sugar, ¾ cup of water and two teaspoons of fresh lime juice. Place the saucepan on medium heat and stir the mixture until the sugar dissolves and it comes to a boil. Boil the mixture without stirring until it reaches a temperature of about 235 degrees Fahrenheit – on a candy thermometer this is the soft-ball stage. Cover the mixture and continue to cook for only three minutes. Take the mixture off the heat and cool it slightly. While beating the cooked mixture, slowly pour in the beaten egg whites. Add 1 teaspoon of vanilla extract and beat the icing until it is cool, fluffy and well blended. The key is to beat this icing until it is cool so the ingredients do not separate.
Are you ready to assemble the COCONUT CAKE?
Place one layer of the cooled cake on a cake plate or cake stand. Spread evenly on the top only about ½ cup of the icing. Sprinkle about ¼ cup of the fresh coconut over the icing. Next carefully place the second layer on top of the first. Spread the sides and top of the cake with the remaining icing. Sprinkle the remaining coconut on the sides and top. Cover and refrigerate the coconut birthday cake until ready to serve.
