Birthday Pastry Puff

Pastry Puff – Makes four dozen Puffs for Stuffing with crab meat, deviled ham, or chicken salad, etc.
INGREDIENTS: 4 eggs at room temperature; 1 cup of shredded Swiss cheese( ¾ cup of cheese for batter and ¼ cup for topping); 1 cup of All Purpose flour; ¼ cup of butter; ½ cup of whole milk; ½ cup of water; ¼ teaspoon of salt; pinch of pepper; pinch of nutmeg.
Preheat oven to 400 degrees F. Grease two large baking sheets.
In a 3 quart sauce pan, mix water, butter, milk, salt, nutmeg and pepper. Heat over medium to high heat until mixture boils. Remove the pan from the heat. While stirring the mixture, stir in slowly 1 cup of flour. Place sauce pan over medium to low heat, stirring constantly, and cook until the dough leaves the side of the saucepan clean. Immediately remove the pan from heat and add eggs, one at a time. Beat as you add the eggs to keep the batter smooth and shiny. Beat until mixture loses the glossing egg finish and add ¾ cup of shredded Swiss cheese.
Using a teaspoon, drop rounds of the batter on the baking sheet about one inch apart. Sprinkle each round with Swiss cheeses from remaining ¼ cup of cheese. Bake on middle rack of oven for 30 minutes or until golden brown. Be careful not to burn cheese topping.
Remove puffs from oven and place each one on a wire rack to cool.
Prepare cooled puffs for stuffing by cutting in half and scoop out moist excess dough. The moist dough in the middle of the puff is thoroughly cooked; however it will become too doughy when puffs are stuffed.
