Birthday Liver Pate

The Liver Pate is a classic appetizer. This free recipe makes 2 cups of pate.
INGREDIENTS: ½ teaspoon of salt; ¾ teaspoon of Hot Pepper Sauce, such as Tabasco ™ brand; 12 cup of dry white wine; ¾ cup of parsley; ¾ cup of chopped scallions; one pound of cleaned chicken livers; 1/3 cup of butter.
Melt butter in a large sauté pan over medium to high heat. Next add chicken livers, parsley, and scallions. Sauté until livers are brown and cooked thoroughly. Transfer cooked mixture to a food processor and add ½ cup of dry white wine, hot sauce, and salt. Process until mixture is smooth. Place mixture in small pottery bowl or crock. Cover tightly with plastic wrap and refrigerate for 4 to 6 hours. Serve with spreading knife and small unsalted crackers or thinly sliced French Bread.
