The ceremony of cutting the cake - placing each decorated piece carefully on a cake plate. Let's make sure each portion has some of the frosting!!!

If you are taking the time to bake from scratch the birthday cake, please make the birthday cake frosting also. Most recipes take from 10 to 15 minutes to prepare and the difference is amazing!

Vanilla ~ No Cook

Birthday cake frosting that may be made the day before and refrigerated. To make your own frosting use a small mixing bowl in which you stir together 2 tablespoons of heavy cream, a dash of salt, and 1 teaspoon of vanilla.

In another small bowl, use an electric mixer on medium speed to beat 2 and 1/2 sticks of room-temperature, softened, unsalted butter for about 45 seconds.

Reduce the speed to medium low, and sift in 2 and 1/2 cups of confectioners sugar slowly adding sugar.

Beat until smooth (about 3 minutes). Change the speed of the mixer to medium high and slowly add the heavy cream mixture while mixing. Continue to mix until the frosting is fluffy - about 5 to 6 minutes.

This recipe makes about 3 cups of cake frosting and is enough for a two layer or a sheet birthday cake. Perfect frosting for Red Velvet Cake and Devil Food's Cake.

Coconut ~ No Cook

To make your own coconut frosting follow this recipe. In a small bowl stir together 2 tablespoons of heavy cream, a pinch of salt, 1 teaspoon of vanilla extract and 1 teaspoon of coconut extract.

In a large bowl place 2 sticks of room-temperature, softened, unsalted butter and 1/4 cup of cream of coconut. Using an electric mixer, mix together the butter and coconut on medium high speed until it is smooth - about 15 seconds.

Reduce the speed and slowly sift in 3 cups of confectioner's sugar. Mix until smooth for about 3 to 4 minutes. Next slowly pour the heavy cream mixture from the first bowl into the large bowl. Continue to mix on medium high until the frosting is fluffy - about 5 to 6 minutes.

Butter Cream

Measure out nine tablespoons of butter, six tablespoons of shortening, such as Crisco, and one cup of granulated sugar into a medium mixing bowl.

Using a fork cream together the shortening, butter, and sugar. Heat in a microwave or on the stove ¾ cups of milk until it is very hot (not boiling).

Pour an ounce of hot milk at a time (carefully to the butter mixture) and stir slowly to blend the mixture without melting the butter. After the mixture is blended add 1 ½ teaspoon of vanilla extract.

Beat mixture with an electric mixer for 3 to 4 minutes. The frosting has the consistency of soft cream cheese. Perfect frosting for Red Velvet Birthday Cake.

Milk Chocolate

This frosting requires a food processor. Cut one stick of butter into 8 pieces and keep them the refrigerator until needed. Place 10 ounces of milk chocolate, a pinch of salt and 1 tablespoon of corn syrup in the food processor.

Heat 1/2 cup of heavy cream to boiling. With the food processor running, slowly pour the boiling heavy cream in the feed tube and process for 1 minute. Next add 1/2 cup of confectioner's sugar in the feed tube and process for about 30 seconds.

Next add one at a time the 8 pieces of chilled butter through the feed tube and process until smooth - for about 30 seconds. Pour the frosting into a medium bowl and stir often until thick. It will thicken up in about one hour at room temperature.

This recipe makes about 2 cups of frosting and is enough for a sheet birthday cake or 24 cupcakes. Perfect frosting for Yellow Birthday Cake and Devil Food's Cake.

Cream Cheese

This birthday cake frosting is used on a bundt cake, sheet cake or cupcakes, but it should not be used for a layer cake.

In a food processor place 5 tablespoons of unsalted, softened butter, 8 ounces of cream cheese, 1 tablespoon of sour cream, and 1/2 teaspoon of vanilla extract. Process for about 5 seconds.

Through the feed tube slowly add 1 and 1/4 cups of confectioner's sugar and process for about 10 seconds. Transfer the frosting to a bowl for use.
