Birthday Artichoke Frittata

The Birthday Frittata may be prepared in advance and refrigerated. Cut the frittata before reheating in microwave and serve hot.
INGREDIENTS
5 eggs; ½ cup of shredded Swiss cheese; 2 tablespoons of Romano or Parmesan cheese; ½ cup of chopped scallions; 1 tablespoon of chopped Italian (flat leaf) parsley; 1 tablespoon of olive oil; 1 can of drain artichoke hearts; 1 teaspoon of salt; fresh ground black pepper.
Chop the artichoke hearts in place them in small bowl. In a 10-inch skillet heat 2 tespoons of olive oil over medium heat. Add chopped scallions, and stir until transparent or tender. Remove scallions form pan.
In a medium bowl beat the 5 eggs until frothy. Stir in cheeses, artichoke, scallions, parsley, salt and fresh ground pepper.
Over medium heat, pour in 1 teaspoon of olive oil, then pour in egg mixture. Cook for 4 minutes without stirring or until bottom is medium caramel color. Place a large plate over the skillet and invert the frittata. Slide frittata back into skillet with the uncooked side down.
Cook about 4 more minutes or until center is firm when pressed. The underneath side should also be medium caramel color. Turn frittata onto a clean plate to serve. Cook into 16 pie shaped wedges.
