Angel Birthday Cake!
Do not spray cake pan with vegetable spray!!!
The Angel Birthday Cake cooks in an oven with slightly less heat then most cakes.
Preheat oven to 325 degrees Fahrenheit. For best cake baking results, verify the temperature with an oven thermometer which may be found in most cooking or baking sites.
Line a 16-cup tube pan with only parchment paper. The parchment paper ensures that even non-stick pans release the cake without damage. Adjust oven rack to middle.
This birthday cake takes less than 10 minutes to prepare.
In a medium mixing bowl, whisk together ¾ cup of cake flour and ¾ cup of sugar.
In another bowl (large) whip 12 room-temperature egg whites with an electric mixer slowly. When the egg whites are foamy, add 1 teaspoon of cream of tartar and ¼ teaspoon of salt.
Measure another ¾ cup of sugar then add it to the foamy egg whites while mixing on medium speed. Add the sugar to the egg whites teaspoon by teaspoon as the batter develops shiny soft peaks.
Now it is time to manually fold in the flour and sugar mixture you prepared first. Add about ¼ cup of the flour and sugar mixture, and then gently fold it in. Repeat this step until all of the flour and sugar mixture is folded into the egg whites. Be very careful - do not stir but fold in the mixture so you do not lose the egg volume.
Gently pour the mixture into the tube pan and smooth the top. Gently tap the pan on a hard surface several times to make it settle. Clean the edges of the pan to remove any batter.
Bake the cake for about 55 minutes or until golden brown. After 30 minutes, rotate the pan. The cake is done when the top springs back after being pressed firmly.
After removing the Angel Birthday Cake from the oven, turn it upside down on a rack, a funnel, or its feet.
Allow the cake to cool for about 3 hours upside down, and then use a sharp knife to loosen the cake from the sides.
Turn the pan onto a cake plate and gently tap several times for it to release. Remove the parchment.
The cake may be served with several light toppings: sweetened cocoa, confectioner's sugar, or whipped cream and fresh berries.
The Angel Birthday Cake is great base to experiment with flavors and birthday theme colors! Try this approach to filling the angel food cake with moist layers of flavored ricotta cheese.
STEP 1:
Slice the cooled Angel Birthday Cake into three to four horizontal layers creating cake layers.
STEP 2:
Prepare 3 different flavored ricotta cheese mixtures for four layers or 2 different flavored cheese for 3 layers. As a precaution adjust the sugar and liquors to your preferences. Because weather conditions, specific ricotta brand and intensity of food coloring and liquor flavors may affect this mixture, please sweeten ricotta to taste and add liquor gradually to keep mixture stiff like peanut butter that has been refrigeratored. Please do not whip or over mix ricotta cheese because it will become thin and watery.
Measure 1 ½ cups of ricotta cheese and place in a small bowl. Fold in 4 tablespoons of confectioner's sugar or sweeten to taste. Choose from these suggestions for your color scheme.
STEP 3:
Whip three cups of whipping cream and sweeten to taste. Place whipped cream in refrigerator.
STEP 4:
Place the bottom layer of the Angle Birthday Cake on a large cake plate. Pour and spread evenly one of the cheese fillings on top of the lay. Take care to keep the cheese off the sides of the cake.
STEP 5:
Place the next layer on the cake plate layers and add the next cheese mixture, and so on. There is no cheese mixture on the last layer of cake.
STEP 6:
Lastly, spread the whipped cream over the top and sides of the cake. Place the cake in the refrigerator until time to serve.
Depending on your birthday celebration color theme, pick from the following colors for the filling of the cake. If, for example, your theme is yellow and white, only make yellow colored filling layers. Or, mix it up like confetti - make each layer a different color!!!
For green layer, add 4 drops of green food coloring and one tablespoon of Creme de Menthe liquor. Place bowl in refrigerator to cool.
For yellow layer, prepare another small bowl of ricotta cheese and confectioner's sugar mixture. Add 4 drops of yellow food coloring and one tablespoon of Banana liquor.
For pink layer, prepare another small bowl of ricotta cheese and confectioner's sugar mixture. Add 4 drops of red food coloring and one tablespoon of Ameretto liquor.
For brown layer, prepare another small bowl of ricotta cheese and confectioner's sugar mixture. Add 3 tablespoons of sweetened cocoa and one tablespoon of Chocolate liquor.
For blue layer, prepare another small bowl of ricotta cheese and confectioner's sugar mixture. Add 4 drops of blue food coloring and one tablespoon of Blue Curacao liquor.
